starting from scratch

We began in 2015, planning a re-model of what was once a law firm. Converting an old office space into a commercial kitchen was going to be no small feat. Preserving the historic structure and maximizing every inch of usable space required careful planning and staged execution.

Slip resistant, stain resistant quarry tile and a Captive Aire heated hood system. The hoods are thermostatically controlled to turn off/on when needed. Fully programmable through a digital control switch.

After completing the remodel in March 2016, it’s time to start moving in the equipment we have been collecting and refurbishing.

sustainable sourcing

Most of our commercial appliances are resourced and professionally refurbished. Recovered from restaurants around the area and given a new lease on life. Working with local, used restaurant equipment brokers provides the ability to source reclaimed equipment.

The oven is a classic Vulcan from the 70’s. Recovered from a remodel of the Troy High School kitchens. We were lucky to acquire a pair of these and use the other for parts that would be costly to find or fabricate.

The gas range is a cast off from The Crooked Lake House and the dish machine was a spare from Next Door Kitchen & Bar. A fantastic restaurant in Ballston Spa. Even the sink was once in a grocery store in Glens Falls.

Today you will find the bakery in constant transition. Things are always changing in the kitchen as well as the coffee bar. Specials change weekly and the ingredients are even fresher.
